Victoria and Rodrigo, partners in life as well as in their profession, decided to settle at Cola de Mono to launch their new project.
With the support of Gian Marco and Alejandra they designed a new kind of concept, in terms of the menu as well as the interior design and operational part of the restaurant, basing themselves on self-sustainability and the protection of the environment. This is what has brought forth dishes that combine local ingredients and vegetables from the Chola y Che organic garden with international cuisine. The interior design emphasizes the reuse of material, using the backdrop of the natural paradise that surrounds the restaurant, with a dining room completely open to provide views of the river, the mountains and plants as far as the eyes can see.
